The beauty of the experience is its naturalness, you cannot rush an African, let alone a Ghanaian; do not expect instructions, masterclasses or family gatherings to be on time, lasting for a certain amount of time or finishing at a certain time; time is not measured and metered out as we are used to. In Ghana you have time for everything, especially chatting and being social and whatever you are doing, whether it is a Masterclass demonstrations for ‘broonies' it will happen when it happens!

Therefore, do not arrange to meet fellow students at a certain time and leave family meals or guests as this will be extremely rude and you and the family will lose face and cause humiliation and gossip around the village.
Following your masterclass presentation, where you will ask questions, take notes and observe each process you will then practice making your own meal. This will be supervised by the cook. If you are cooking for a family, most probably one of the young girls will help you, and remind you what you are doing right and what you are doing wrong! Some of the local dishes are mentioned below:
  • Food preparation masterclasses
  • Pounding fufu a staple of most Ghanaian's diet
  • Making kenke – a staple food
  • Making banku – a staple food
  • Ampesei Stew with kontomire which is like spinach
  • Joloff rice – special rice made for special occasions
  • Red Red – fried plantain with black-eyed beans
  • Killi Willi – plantain mashed with fresh ginger and deep fried
  • Groundnut soup with rice balls
  • Grasscutter – bush meat
Working with Ghanaian people in their homeland will provide a rich cultural experience and develop greater understanding of their life, values, expectations, norms and rituals. This opportunity will be like nothing else you will have experienced; by nature Ghanaians are very warm, friendly and welcoming and will share their everyday life routines with you. It's a privilege to have local business people, villagers, the Chief and Elders open their lives to foreigners to share their knowledge, skills, culture and way of life. The situation brings with it great excitement on both sides, so UK students can respond to their hosts with their own culinary delights and extravagansas returning the Ghanaians hospitality with special meals culminating in a Gala Night of food and entertainment.

The SCT will develop a varied and interesting skill building and life enriching itinerary for Catering and Hospitality students. If a college would like their students to complete project portfolio's this can be incorporated into the programme, with time made available for students to conduct surveys, take photographs and shop for products.
